I might be misremembering, but wasn't it mentioned that Nick was kind of the second choice for Lucifer? Somehow I'd inferred that there's only a few people who can be vessels for a given angel, and even in that pool there's better candidates than others. Maybe there isn't a second choice for Michael, for whatever reason. And perhaps he needs a physical body before he can go dream-hopping.
My thought on Dean's angel-hearing is that of he and Sam, Dean is a "normal human" and that gives him strengths Sam doesn't have. Sam might have mental abilities Dean doesn't, but that could theoretically leave him open for other sorts of attacks.
